1. The Restaurant Manager has explained to you the job of a hostess in the restaurant.

Repeat his or her words about the job.

You will be a hostess, greeting and seating the guests. In some cases you may take drink orders for repeat customers.

2. You are asked to explain the dishes on a menu to the guest, what information about the dish should be included? Explain it with an example.

“Shui Zhu Yu” is fish slices in spicy soup.

Stir-fried green beans are called “Si Ji Dou”. That dish is very popular.

There are many styles of Chinese food, including Cantonese, Shanghainese, Hunan, Sichuan, and Northern style which you often see in Shanghai.

I can also recommend a stir-fried tofu dish called “Jia Chang Dou Fu”. It is a home-style tofu dish with some vegetables.

3. Explain what to do when taking dessert order for the guest.

Give the dessert menu to the guest, and recommend some desserts to them.

Bread Pudding is sweet bread with raisins backed in an egg pudding mix.

Chocolaty dessert like Black Forest Cake and it is served with whichever cream or ice cream.

Ask the gests about drinks such as tea and coffee.

4. Explain to a guest what a cocktail is and how it is made.

Long Island Ice Tea: tequila, white rum, vodka, gin, triple sec, lemon juice, sugar and cola.

Fruit Juice Cup: champagne, dark rum, orange juice, lemon juice, pineapple juice, sugar and ginger ale. Manhattan: a classic drink with Canadian whiskey, vermouth and angostura bitter.

The cocktails are served either straight up or with ice.

5. Explain to a guest what a non-cocktail is and how it is made.

Bora Bora: Pineapple juice, dry ginger ale, grenadine and lime juice.

Fruit Cocktail: orange, grapefruit, passion fruit, lime, mango and pineapple juice, with just a little kiwi fruit syrup in it.

Magic Island: pineapple juice, grapefruit juice and coconut cream, with a little grenadine and whipped cream.

Generally speaking, Sichuan dishes are spicier than Shanghai dishes. Sichuan dishes use many pepper and chili sauce. On the other hand, Shanghai dishes are sweeter and lighter than Sichuan dishes as it use a lot of sugar.

10. How do you explain to the guests when there is something wrong with the bill they paid?

I am sorry to say that our bill detector says this 100-RMB bill is no good. We checked twice and twice it caused an alarm on the bill checking machine. There could be many reasons; for example, the ink is old or there is a stain on it. In any case, I am sorry we cannot accept it.

11. Write three ways of payment methods.

Pay in cash, pay by credit card, or put the bill on room account.

12. Why it is not necessary to leave a tip in China?

Because the service charge is included.
